Pinot Bianco grapes in different clonal selections
Production area
Pozza plot, located at 225 m.a.s.l. on the basal part of the alluvial Faedo fan; 10-20% slope, southern exposure. Calcareous matrix, deep, medium texture, discreet presence of skeleton, good organic substance equipment, balanced content of nutrients.
Vigalzano plot, located at an altitude of 500 m.a.s.l. in a hilly area near the town of Pergine Valsugana; 20-30% slope, southern exposure. Soil originated from outcrops of metamorphic rock-slates, dissolved, sandy texture, rich of crumbly skeleton, decarbonated and neutral.
Vineyard characteristics
Pozza: planting year 2009, vine density 4.200 plants/hectare, simple Trentino pergola cultivation breeding.
Vigalzano: installation dated 2011, vine density 4.200 plants/hectare, simple Trentino pergola cultivation method.
Harvesting
Manual harvest conducted in the middle of September, average yield of 70-80 quintals/hectare (1,75 kg/vine).
Vinification
White wine vinification process with short cold maceration of crushed grapes. Fermentation conducted partly in stainless steel tanks, partly in small oak barrels; long stay over the lees.

Serve at 10°C
Tasting notes and food pairings
Straw-yellow colour with green highlights. An extremely complex and varietal nose. It has a well-balanced and pleasantly acicolous taste. Initial nose sensations return consistently.
Perfect as an aperitif and suitable for appetizers and light first courses. It is a great partner for freshwater fish.
