The Edmund Mach line includes all single-varietal typical of the regional viticultural-oenological tradition. The aroma of these wines reflects the strong character of each grape that wed the land from which the grapes come.
The Winery is developed inside the ancient Augustinian monastery dating back to the 12th Century, and represents not only an important historical and architectural document, but also a valuable testimony of the vine and wine tradition of Trentino.
Over time, the Winery has undergone repeated extensions, which began during the Renaissance (XVI century) and ended in 2004. The current capacity is a great example of combination between history, centenary charm and rational modernity. The facility is now equipped with a modern and technological winery and a special department for the production of classic method sparkling wine.
In order to best represent the provincial wine scene, the winery is still committed to produce a large range of products (about 30 different wines) obtained from the harvesting and rocessing grapes cropped only from the best vineyards, with the aim of proposing a range of products to serve as an example and representing the entire oenological scenario in the province of Trento.
The operative philosophy implemented by the current management of the winery relies on the following principles:
- full respect of suitability and expression of the territory;
- enhancement of the oenological potential of the grapes;
- application and transfer of full scale of the innovative aspects that have emerged from the other centers of the Edmund Mach Foundation;
- technology investments, commercial and promotional acts to enhance the qualitative aspects of the individual products.

Visits to the Winery and the Distillery
The Winery and Distillery are equipped for visits, even with wine and grappa tasting (for up to 50 people) which can be customized to perfectly suit visitors' requirements. Tours must be planned and booked in advance.

The wines of Castel San Michele range, in both Incrocio Manzoni and Red, are an elegant example of the authentcity of the territory sorrounding San Michele all'Adige, expressing their balance with the skill and imagination of the work in the cellar.
The wines of the Monastero range are the result of an oenological project set up with extreme passion and rigor born in 2000 on the legacy left by the work of the founder Edmund Mach to witness the strong propensity of the Trentino vineyard to produce great wines, in the sign of a refined longevity.
Organic wines come from the Navicello plot, near Rovereto, along the Adige river. Since the mid-Nineties these vineyards are cultivated in accordance with the biological regulations and standards.
The Golden Crescent Moon, inspired by the Istituto Agrario emblem, and the Edmund Mach founder icon, identify the products of the special wine of our Winery.
